Summer Zucchini Noodles


All you need is a spiralizer and a blender and you are ready to go!

(I love a spiralizer like that one )

INGREDIENTS (serves 2)

  • 3-4 Zucchinis
  • 1 avocado
  • 2 Mangos
  • 1 stalk of fresh rosemary
  • 1 stalk of fresh dill
  • 1 spring onion
  • add a little water if needed

Spiralize the Zucchinis first and then put all the other ingredients into a blender to make the sauce. It only takes about 10-15 minutes to make which is perfect for anyone like me who wants to get out of the kitchen before they even step foot in it. The combination of the sweet mango, the rich avocado, and fresh rosemary & dill is so satisfying and delicious.
